Ingredients:
1 tbsp. of avocado oil
1 yellow onion, chopped
1 lb. of ground beef
1 tsp. of garlic powder
1 tbsp. of chili powder
2 cans of diced tomatoes
1 can of garbanzo beans
1 can of black beans
1 can of kidney beans
1 cup of corn (or 1/2 cup of Cowboy Caviar salsa, to give it some more spice)
Salt + Pepper to taste
Sauté the onion with the avocado oil, until it is translucent.
Add the ground beef and more oil if needed, cooking the beef until it is browned and no longer pink. Add garlic and chili powder and mix into the beef, breaking it up into smaller pieces.
Without draining, add the canned tomato, and all of the cans of beans. You may drain some of the cans of beans if you want to make the chili less brothy.
Let simmer for 5 minutes, or until meat is fully cooked, stirring occasionally.
Serve with sour cream and shredded cheese,
and enjoy
